INGREDIENTS

2 cups water
2 cups cashews, soaked 4-8 hours, discard soaking water
1 cup raspberries (frozen)
1 cup peaches (frozen)
2 tablespoon agave nectar
1 tablespoon vanilla extract
4 ice cubes (if you want it colder)

DIRECTIONS

  • Combine cashews and water using a blender. Set to high speed and combine for 1 minute or until creamy.
  • Add the raspberries, peaches, agave and vanilla. Puree until smooth.
  • Mix in some ice cubes, if preferred. Pour into tall glasses and serve.
  • Makes 2 servings.
