Weight Loss Recipes Thanksgiving Leftovers Transformed: Turkey Tetrazzini with Zucchini “Noodles”

This recipe is the perfect way to use up those turkey leftovers and a few veggies bumping around the fridge. I broke out the spiralizer for this but if you still haven’t gotten on the bandwagon or are waiting for Santa to bring you one, you can use a julienne peeler for the zucchini or just slice the zucchini and onion very thin. I love using the spiralizer because the zucchini and onion “noodles” really give you the linguine feel that is characteristic of Turkey Tetrazzini.

You can use any broth. I lucked out and won an assortment from Pacific Foods the other day so I had my pick. I love the turkey broth, it’s got a hint of rosemary that I think is perfect with this dish.
